At Higgins we are fortunate to be situated in one of the world’s most fertile, productive and diverse agricultural regions – the Willamette Valley. We embrace the valley’s rich farming heritage and celebrate its remarkable seasonal bounty. The moderate climate supplies us with a year round steady stream of stunning ingredients with which we craft our menu of classic country dishes.

The winter soil brings us the deep earthy flavors of root crops, cabbages, kales and mustard greens, black trumpets, yellow foot chanterelles and precious truffles.  From its quieter bays and inlets of the sea come succulent oysters, Dungeness crab, mussels and clams.  The tastes of these rich components are melded and enhanced by gentle cooking.  Hearty casseroles, slow-simmered stews, smoked and roasted meats all bring warmth and nourishment to body and soul in these colder months.  The finale of the winter’s table comes in the form of pastries and sweets comprised of apples, pears, tart but sweet citrus, preserved fruits, nuts and robust cheeses.
