Higgins Cassoulet Christmas Holiday Family Feast Box
We’re pleased to offer a Cassoulet Holiday Feast Box to go for your 2020 Christmas or holiday dinner. A cassoulet is a rich casserole that originated in Southern France and features slow-baked meat or vegetables and white beans—hearty and comforting winter fare.
Our Feast Box starts with a side of our applewood smoked Bristol Bay Sockeye with all the condiments. Follow that with Tourain du Périgord, a deeply savory garlic soup from the Dordogne, and a salad of seasonal greens from Stoneboat Farm. Champoeg Farm has raised the beautiful geese that are the feature of our main course cassoulet, with a foundation of the finest Tarbaise beans from our friends at Ayers Creek Farm. The confit, cured breast and Toulouse-style sausages are slow baked in roasted goose stock with the beans. Each cassoulet comes in a special Spanish enameled steel pan with more goose stock and a savory garlic and herb crust. (There are a number of delicious vegetarian selections as well.) For dessert, we've again partnered with Michelle at Bella's Italian Bakery for her traditional Bûche de Noël for chocolate lovers; or select our holiday ricotta cheesecake with gingered cranberry compote.
